The earliest black tea in the world was invented by tea farmers in the Wuyishan tea-growing area of Fujian in the Ming Dynasty (1368 -1644).The production of Chinese black tea involves several steps, including withering, rolling, fermenting, and drying. The withering process involves exposing the tea leaves to air for a period of time, which allows them to lose moisture and become more pliable. The rolling process then breaks down the cell walls of the leaves, releasing enzymes that trigger the fermentation process.
